Heat the oil in a pan, once hot fry the mushrooms for 2-3 minutes and season with salt and pepper. Set aside.
Heat water in a pan and bring to the boil with a pinch of salt. Carefully break the egg into the water. Turn the heat down and leave to simmer for 1 minute.
To serve: place the toasted bagel on a plate. Top with fried mushrooms and the lift the poached egg out of the water and place on top of the mushrooms. Garnish with chopped chives and arrange sliced tomatoes on the side.
