Grill the bacon to your personal taste.
Boil water in a small saucepan then lower the heat until it's simmering. Add a teaspoon of vinegar.
Crack the egg into a small bowl. With a spoon, start swirling the water and carefully slide the egg into the saucepan. Allow the egg to cook in the gently simmering water for 3-5 minutes.
In the meantime, place the spinach in a pan and lightly cook until it softens.
When the egg is cooked, carefully lift out with a slotted spoon.
Place spinach on a plate, put the egg on top. Cut the bacon into slices and sprinkle on top. Drizzle with olive oil and add salt and pepper.
