Cook potatoes, parsnip, carrots, celeriac and eggs. Put eggs to the pan in last 10 min of cooking. Veg skin on. Just in water. Leave to cool.

Cut all cooked ingredients into small cubes. Dice cucumbers and apples.Cut cucumbers before apples, cucumber juice prevent apples from getting dark. Add all tin veg, salt, pepper and mix together.

Serve with mayo.

Put eggs to the pan in last 10 min of cooking. Cut cucumbers before apples, cucumber juice prevent apples from getting dark. Don't put mayo to whole salad, will be fresher for longer.
