Polish vegetable soup recipe

Dice all vegetables and place into large pan

Dice bacon and cook in olive oil with chopped chilli and garlic

Add 5 litres of boiling water to vegetables and bring to boil

Add bacon to soup and stir and simmer

Stir in 6 stock cubes (to taste)

Stir in chopped tomato

Simmer for 1 hour

This makes ~8 litres of soup, and is fine for reheating on the stove for up to 3 days
