As part of Tesco Orchard I was given a money off coupon to try for free and review Tesco‘s Exotic Fruit range. I chose a Pomegranate and this was the recipe I came up with!
Pre-heat oven to 180c. Cut the squash into 3cm chunks and add to roasting tray. Coat with olive oil and ground coriander, salt and pepper. Roast for approx. 30 mins or until soft. Near to the end of cooking, steam the asparagus for 5 minutes. Slice the mozzarella and lay out on a plate. Once cooked, also plate up the squash and asparagus tips. Scatter with Pomegranate Seeds and a drizzle of Balsamic Glaze.
