Preheat the oven to Gas 4, 180°C, fan 160°C.
Wash the unpeeled potatoes and quarter them. Place in a roasting tin. Wash the leeks, taking care to remove any mud from the inner leaves. Slice into long pieces and add to the roasting tin.
Place the pork chops to the roasting tin on the bed of leeks and potatoes. Cover with the oil and garlic. Put the tin in the oven and roast for 25 minutes. Remove the tin and carefully turn the chops then roast for a further 25 minutes.
Check if the potatoes are cooked. If not, allow another 10 minutes.
Serve with braised cabbage. Season to taste add gravy if you want
