Pour all the spices into a pestle and mortar and crush them together with the shallot and garlic. Add the remaining ingredients and mix thoroughly.

Place the pork ribs in a large bowl and cover them in the marinade. Leave them to chill for at least 1 hour – the longer you allow them to marinade, the tastier the end result.

Once chilled, place the ribs in a pre-heated oven or on the hot grill of a barbecue until the meat is cooked thoroughly.
