Place the frying pan and saucepan on the hob, over a high heat. Add 1 tbsp of oil to each. Beat the pork with the rolling pin and flatten out to half its original thickness. Place one sage leaf on each steak and wrap with the prosciutto. Cook in the frying pan for about 3-4 minutes per side.
Meanwhile, crush the garlic and add to the saucepan with the lentils and tomatoes. Leave to cook and roughly chop the parsley and zest the lemon.
Season the lentils to taste and add a squeeze of lemon juice. Scatter with the parsley and lemon zest, and serve.
