Prepare the sauce ahead of time by combining all the ingredients for it in a saucepan. Bring to a simmer over a medium heat and allow it to reduce until slightly thickened. Remove from the heat and set to one side. Heat the groundnut oil in a wok over a high heat until hot.
Stir-fry the onion, ginger and courgette for 2-3 minutes, then add the pork and continue to stir-fry over a slightly reduced heat for 2-3 minutes until just cooked. Add the sauce and reduce the heat; cook for a further 2-3 minutes. Spoon onto serving plates and garnish with the chive stalks.
