a nice filler for a cold winter evening
make a yorkshire pudding batter mix using the eggs, milk, flour and a dash of salt and pepper. combine all ingredients together with a blender. i reccomend leaving this to rest for at least 20 mins.
score the chops and rub salt and pepper into them.
seal the chops using a grill on a medium to high heat, you dont need to cook them through at this point! lightly brown is enough!
while these are under the grill prepare your tin with oil or fat and place in a preheated oven, 230 degrees celcius
when the chops are sealed and the fat is good and hot in the tin, pour in most of the batter mix, then place the chops carefully into the batter. pour the remaining batter over the chops. return to oven
prepare your plates and gravy! after around 20 25 mins it should be golden brown, if so it is ready!
serve with gravy and mustard as a starter!
accompany the starter with mustard mashed potato and vegetables and use as a main course!
keep an eye on it, but dont keep opening the oven door!
prepare the batter in advance.
to make it look more special use individual tins for each chop and batter mix and add some crispy bacon after cooking!
serve with apple sauce and mustard,
