Pre-heat the oven to 180°C.
In a large frying pan add a drizzle of oil, brown the pork shoulder on all sides over a high heat. Place in an oven proof casserole dish. Sauté the onion until soft.
Add the celery, pitted olives, chopped tomatoes, smoked paprika and red wine, bring to the boil then add to the casserole dish. Place the casserole dish in the pre-heated oven at 180°C oven and cook for 90 miuntes - 2 hours.
Cook the rice as per pack instructions, add the turmeric to the cooking water.
Carve the pork into portions and serve with the sauce and the turmeric rice.
