Put the potatoes into salted water, bring to the boil and simmer for 10 mins to partly cook.
Heat the oil and fry the onions for a few minutes. Add the mushrooms and cook for 2 more minutes.
Layer up the potatoes into an individual ovenproof dishes with the mushrooms, onions, bacon and some cheese, finishing with cheese.
Bake for 30 minutes until golden.
