Preheat the oven to 190°C.
Combine all the vegetables in a large mixing bowl and toss with the olive oil and seasoning until evenly combined. Transfer to a 30cm x 10cm ceramic baking dish. Bake for 20 minutes, then remove and sprinkle the grated Cheddar on top and bake for a further 20 minutes. Remove and allow to sit for 5 minutes before serving.
