I learnt this recipe when living in Ireland.

Collect all the items together. You will need a sharp knife, 1 small bowl, 1 larger bowl and a greased ovenproof casserole dish.

Put the flour and cheese into the bowls, and arrange everything within easy reach.

Peel the potatoes and cut into slices about half a centimetre thick. Put to one side and peel and slice the onions. Put them to one side too.

Pre heat the oven to gas mark 5

Using the casserole dish put a layer of sliced potatoes at the bottom, then a layer of sliced onions. Sprinkle some mixed herbs, salt and pepper on top, then a dessertspoon of flour. Continue putting the ingredients into the dish, as described in layers, until you have used them all, Ending with a layer of potatoes on the top.

Pour milk over it all, using as much as is needed to reach the top layer of potatoes. Sprinkle the grated cheese over the top.

Put in the middle of the oven and cook for approximately one hour, until potatoes are cooked and cheese has browned. You can check progress by using a knife or fork to push into the potatoes to see if they are cooked.

Dish out onto plates with the meat dish as required
