Looking for filling, quick, easy and relatively healthy food to do after the gym or a run as an alternative to pasta
Place a medium size frying pan over a medium heat and add olive oil, meanwhile peel and slice onion into halves and each half into four quarters and add to pan.
While the onion is frying lightly toast the pitta breads
pick some fresh mint leaves, rinse and leave to dry on some kitchen roll
When the onion is starting to brown (around 5 minutes) add two tablespoons of water to the pan and then add the chicken pieces. Cook for a further five minutes until the chicken is heated through.
Place the three breads on three small plates and share half of the tatziki or soured cream between them spreading it over the breads as you go.
spoon the hot chicken/onions on to the tatziki topped breads and add some rocket leaves
Share the remaining tatziki between the three plates by spooning over the top of the chicken/onions
Add some fresh mint leaves and a squeeze of lemon juice. Serve warm
For a lower fat version use a few tablespoons of water instead of olive oil
For the chicken pieces you can use plain chicken, chicken tikka, chinese chicken or even leftover chicken from the sunday roast.
