Prawn and Coconut Soup recipe

Unbelievably simple from Fantastic flavours using fresh ingredients from Tescos.

Pour the chicken stock and coconut milk into a pan.

Add the lemon grass, lime leaves and ginger. Bring to the boil.

Add the prawns and boil for 3 - 4 minutes until cooked

Remove from the heat and add the coriander, chillies and lemon juice. Season to taste

  • 400ml Coconut Milk
  • 200g Raw Tiger Prawns
  • 6 Kaffir lime leaves
  • 2 Lemon grass stalks, cut into 2cm pieces
  • 1 Red Chilli
  • 1 Tbsp Fresh Corriander
  • 2 Tbsp Lemon Juice
  • 1/4 Tsp Sea Salt & Freshly Ground Pepper
