For the prawn curry
Heat the oil in a large frying pan or wok and then add the cumin seeds over a low to medium heat. Grind the onions, garlic, ginger and chillies in a food processor to a fine paste then add to the oil. Fry together until the onions are golden brown.
Add about a third of the tin of tomatoes and mash any lumps to make a rough paste. Add the turmeric, garam masala, chilli powder, salt, ground coriander, ground cumin and vinegar to the onions and stir well. Fry until you have a thick paste.
Add the prawns to cook for a few minutes. Add a cup of water and allow to simmer for 10-15 minutes, if it begins to look too dry add a little more water. Finally stir through the chopped coriander and serve.
For the cucumber raita
Grate the cucumber and add to the yogurt. Add a little water if it is too thick. Salt to taste and sprinkle with garam masala to decorate
For the rice
Wash the rice and then boil in water for 10-15 minutes. Drain once cooked and serve.
For the tomato salad
Slice the tomato, onions and chillies very thinly. Mix together and add salt to taste and stir in the fresh coriander.
