This is a very quick recipe, perfect for a midweek meal.
First clean the prawns. Finely chop the onion, chilli and the beans.
Gently fry the onion in the oil add the curry paste. Add the fish sauce and coconut milk, you may have to add some water if it thickens too much.
Add the prawns, beans and beansprouts, taking care to not over cook the prawns.
Garnish with the chopped coriander and chilli.
