Pretty peppery smoked Haddock recipe

Line a baking tray with a large sheet of foil.
Arrange colourful mixture of half the sliced ingredients on the foil.


Lightly oil the smoked haddock fillets and place on top of sliced ingredients.
Cover the fish with the remaining ingredients.
Scatter with herbs and pepper and salt, then wrap and seal well.
Place the haddock in preheated oven gas mark 3 or 160 degrees centigrade,325 F and bake for 20 minutes or until easy to flake
Meanwhile, cook the potatoes in simmering water until tender.

Also serve with french green beans and a dry white wine or Rose , choose La Maison de Roselyne from Tesco.

Serve immediately to avoid drying out.

This is a quick delicious meal which is very pretty and highly nutritious.

  • bunch - spring/salad onions
  • peppers(red, yellow, green), deseeded and sliced
  • small bunch - chives, chopped
  • small bunch - dill, chopped
  • pinch - freshly ground black pepper
  • pinch - fine rock salt
  • 3 large - tomatoes, sliced
  • 300g - new potatoes
  • 2 tablespoons - sunflower/olive oil
