Lay the slices of prosciutto on a flat surface and brush with olive oil using a pastry brush. Arrange the carrot and cucumber in bunches in the centre of the slices and roll tightly into wraps.
Arrange in small wooden carton presentation boxes on plates. Transfer to plates and garnish with sprigs of coriander and cherry tomatoes around the perimeter of the boxes.
