Provencal-style tomatoes recipe

Heat the olive oil in a large, heavy-based frying pan set over a medium heat until hot. Add half of the chopped garlic and sauté for a minute, stirring frequently. Add the plum and vine tomatoes and cook with a little seasoning, stirring occasionally, until they start to dry out.

Once they are almost completely dried out, sprinkle over the remaining garlic and the chopped parsley. Serve immediately.
