This yummy soup is easy to make! (Note: I got to try a pack of Tesco potatoes and a pumpkin for free as I am a member of ‘The Orchard’).
1. Sauté the chopped pumpkin, potatoes, onions, garlic and grated ginger in the olive oil in a large pot until soft. Add the vegetable stock, coconut milk, chilli powder and smoked paprika (if using), a few dashes of smoked Tabasco sauce (if using) and season with a little salt and pepper. Bring to the boil, then simmer gently for approximately 40 minutes.
2. Let cool slightly, then pour into a food processor or use a hand blender and blend the soup until smooth. Return to the pot and re-heat at a very low temperature until heated through, seasoning it further if needed and adding a few squeezes of lime juice if desired. Serve with crusty bread.
