Preheat the oven to 170°C.
Prepare the pumpkin into chips and arrange them on lined baking sheets. Bake for 20 minutes, then remove and pat dry using kitchen paper. Transfer to a large mixing bowl and toss together with the oil, sugar and seasoning.
Increase the oven to 210°C. Arrange the chips and pumpkin seeds on dry baking sheets and bake for a further 15-20 minutes until crispy and lightly coloured. Remove and serve immediately.
