Pre-heat the oven to Gas 6, 200°C, fan 180°C.
Arrange the chicken breasts in a large ovenproof dish.
Wash the tomatoes and pepper. Halve the tomatoes and chop the pepper into rough chunks and add to the dish on top of the chicken breasts.
Drizzle with olive oil and balsamic vinegar and cook in the oven for 30 minutes.
After 25 minutes check the chicken is cooked though. Arrange the parmesan shavings over the top and return to the oven for 5 minutes to melt the cheese.
Delicious served with a spinach and rocket salad and home made wedges.
