Bread and butter pudding was my favourite childhood dessert. Now that my mum has been diagnosed with gluten intolerance, I wanted to make an alternative recipe that both included a gluten free product (Tesco Free From wholemeal) and wasn't too unhealthy
Firstly, preheat the oven to 190°C.
Prepare a loaf tin by lightly greasing with butter
In a bowl, mix the sugar and cinnamon together and put aside.
Lightly butter 6 slices of bread and cut in half
Layer the slices of bread in the loaf tin, while adding the sultanas and sugar as you go.
In a measuring jug, whisk the eggs and milk together. Then add the vanilla essence
Pour the custard mixture over the bread slices, and leave to settle for 10 minutes or so.
Sprinkle nutmeg and any leftover sugar/cinnamon on top.
Bake in oven for 30 minutes or until the top has browned slightly.
Instead of the vanilla essence, try adding the seeds of a vanilla pod for a stronger flavour.
