Heat the olive oil in a pan and add the uncooked rice and vegetables and full cover with water. Add the stock cubeand stir through.
Wait until the water has reduced to a the consistence of a sauce, the rice should be cooked by then. If not, just add a bit of water until the rice is fully cooked.
Tip: This is the base of the recipe, but you can add fresh mushrooms, prawns, onions, chicken pieces, or whatever you like.
