Butterfly the chicken breast and flatten it out with meat hammer. Spread the pesto and garlic butter on top of the chicken and add cheese and onion.
Place the chicken breast on top of cling film and roll it tight, ensuring the ingredients are rolled up in the middle of the chicken
Roll the cling film around and round in the air, holding both ends tight which will tighten the chicken into the centre and tie both ends of film.
Add to a pot of boiling water and cook for ten minutes.
Tips: Chop and change pesto from red to green or mix ingredients around try cherry tomatoes, mushrooms, peppers or spinach, just whatever suits your own personal tastes.
This dish can also be made the night before and stored in the refridgerator overnight.
