Heat the oil in a large pan and fry the onion for a few minutes, to soften.
Add the chicken to pan and brown, lightly cook for 5 mins.
if using vegetables add now, fry for 5 mins.
Stir in the cans of soup, simmer for 20 mins.
Serve with mashed potato or rice.
Use leftover chicken from your Sunday roast, if you like. Serve with mashed potato or boiled rice.
