Toast the bread on both sides. Spread each slice with 1tbsp of the mayonnaise and then layer the spinach, tomato, red onion and avocado on both slices of toast. Top with the flaked mackerel, drizzle with balsamic vinegar and serve.

 

You can put red yellow and green peppers or any other salad.
