Stir together the fish or soy sauce, lime juice and sugar until the sugar dissolves. Then mix together with the chilli. Toss 1 tbsp of the dressing together with the mixed salad leaves and a handful of coriander leaves.
Arrange the leaves on plates along with the cucumber, tomatoes and beef. Drizzle over the remaining dressing and then scatter over the peanuts to serve.
