Pesto is wonderful and this parsley is a great twist on an old favourite.
Crush the garlic with some of the salt
Mix the garlic and salt with the parsley leaves in a food processor.
Add the pine nuts to the mixture and pound again and continue to mix in the food processor
Turn out into a bowl and add half the cheese.
Stir in the olive oil until you get the right consistency,
Season to taste and add in the remaining cheese.
Add more oil if needed to amend the consistency
Serve with Tesco Finest Pasta
