I wanted to find a way to make the gorgeous taste of the raspberries last as long as possible. With the glorious hot weather we are currently experiencing this was the perfect recipe!
Pour the berries, sugar and vinegar into a pan. Mash down over a low heat, for about 10mins until syrupy. Sieve into a clean pan getting as much syrup through as possible.
Pour the seeds into a separate bowl and add the water. Stir to release the remaining pulp. Sieve again into pan and then bring to a boil for about a minute.
Pour into sterilised bottles or kilner jars and leave to cool.
These bottles will last months but once opened store in the fridge.
This cordial is delicious diluted with sparkling water and poured over ice. Due to the syrupy texture it is also perfect poured neat over pancakes. Enjoy!
