This is a recipe that I have devised after much trial and error that is suitable for my toddler to enjoy as it has no salt or sugar in it. Delicious for adults too.

Pre-heat oven to 200°C/Gas mark 6 (fan oven 180°).

Put 12-18 paper or silicon fairy cake cases in bun tray(s).

Measure out all the ingredients into a large bowl.

Mash the banana with a fork before mixing the ingredients together thoroughly either with a wooden spoon or, my preference, an electric hand mix.

Spoon the mixture into the cake cases leaving room for the cakes to rise. It should share between 12 to 18 cases depending on the size of the cake cases.

Bake in the pre-heated oven for approximately 20 minutes. They should be golden brown on the outside and will be quite moist on the inside.

Leave to cool before eating.

The butter should be at room temperature before trying to mix it into the other ingredients. If you don‘t have a chance to take it out of the fridge to warm in advance, measure the butter into your mixing bowl first before adding the other ingredients and put it in the microwave on defrost/30% for one minute to soften.
