Prepare the mash: Boil potatoes in a large pan of water. When cooked, drain and mash. Beat in mustard, butter, cream, salt and pepper to taste. Cover and leave the pan in a warm oven.
Pan fry the steaks: 4-5 minutes each side, depending on your preference. Place in the oven on a heatproof plate to keep warm.
Once the steaks have been removed from the frying pan, add 1 tsp olive oil and fry the chopped shallots until soft. Add the red wine and redcurrants and boil until reduced and a rich sauce has formed.
Season to taste and plate up with steamed asparagus and green beans.
