Wash the ray wings in cold water

Pat dry with kitchen roll/paper Grind some black pepper on each side of fish

Warm a large frying pan on hob then add the oil and butter

Fry fish for 4 minutes on each side

You may need to cook each ray wing in a separate pan. Serve with samphire, potatoes and a wedge of lemon.
