Score the pastry around the edge of the filling to get a better rise.
Chop the onions and garlic and fry them off gently for 15-20 minutes with half the thyme and the balsamic glaze. You can add a little water, if necessary.
Lay out puff pastry and add red onion mixture to the top leaving half an inch all the way round. Crumble goats cheese over the top. Bake for 20-25 minutes in a preheated oven at 180° C.
Serve with crusty bread and a salad, Voila!
