Cooked potatoes and slice, put aside
chop red onions and light fry with the bacon if you are using it, add the potatoes to the pan and spread evenly over the base
crack eggs, add milk, herbs and all other ingrediants to the jug, then puur over the potatoes, continue to cook over the hob for another 3 - 5 minutes
place pen under a light grill to brown and firm up the top of the frittata. Serve hot or cold
You can change the ingrediants to suit your tastes. You can keep the frittata and eat it cold or hot
