I grow rhubarb in the garden and am always trying to come up with new recipes for it.
Wash the rhubarb and cut into chunks
Stew the rhubarb in the apple juice for about 20-30 minutes
Strain the juice out of the rhubarb and allow to cool (Then refrigerate if you have time)
Add the ginger beer to the juice mix and serve.
You can use the cooked rhubarb you have left over in another delicious recipe.
