Chop the beetroot into small chunks
Mix the beetroot with the pack of ready cooked ouy lentils in an oven proof dish
Top the lentil mix with some slices of goats cheese (the mild creamy type is best), about half a pack
Cover the lentil mix with foil & cook for about 15 minutes or until warm
Take the foil off the lentil mix & cook for a further 5 minutes or grill to melt the cheese
Serve with Tesco rainbow trout fillets with lemon & parsley that have been cooked following the instructions on the pack
