This fabulous dish makes entertaining so simple that it’s bound to become your go-to recipe at the weekend.

Heat 1tbsp oil in a large non-stick pan over a low heat and add the chopped onions. Season with salt and cook for 10 minutes, then stir through the sugar and balsamic vinegar. Cook for a further 20 minutes, stirring occasionally until golden, adding a little water to the pan if the onions begin to stick.

Meanwhile, brush the steaks with the remaining oil and set a griddle pan over a medium to high heat. Cook the steaks for 2-2 1/2 minutes on each side for a medium-rare steak. Add another minute for a medium to well-done steak. Loosely cover the steaks with foil and leave to rest for 5 minutes while you finish the sauce.

Pour the cream over the onions and bring to the boil. Add half the stilton and stir to combine until melted. To serve, drizzle the blue cheese sauce over the steaks, top with the remaining stilton and serve with the watercress

Tip: For a perfectly grilled steak, let the meat sit at room temperature for 20-30 minutes.
