Heat the groundnut oil in a wok over a moderate heat and stir-fry the chicken for 3-4 minutes until cooked through, with no pink showing. Remove from the heat and allow to cool, then cover and chill.
Once cool, combine the chicken, rice, celery, sesame seeds, lime juice and soy sauce in a mixing bowl. Toss well to combine evenly. Spoon into serving bowls and garnish with lime slices, the basil and celery leaves.
