This is my grandmother's Scottish shortbread recipe. It is delicious.
Cream butter and sugar together. Stir in flour and cornflour. Draw the mixture together to form a dough.
Press the mixture into a 18cm sandwich tin. Pick the shortbread with a fork.
Bake the shortbread in the centre of the oven for 30 minutes Gas3/160C/325F until straw brown in colour.
Leave to cool. Sprinkle with caster sugar. Cut into 8 triangles.
