Heat the olive oil in a large frying pan over a moderate heat. Sweat the onion for 4-5 minutes, stirring occasionally, until softened.
Add the garlic, cook for a further minute. Add the red cabbage and cook for 5 minutes stirring continuously. Add the apple and cook for 3 minutes stirring continuously. Add the balsamic vinegar, lemon juice and honey and stir in. Spoon onto plates and serve with the cold roast beef
