Preheat the fan oven to 170C. Season cavity of chicken with salt and
pepper and place in oven for around one hour. The inside temperature of the chicken should
be 65-75 degrees Celsius.
Peel and cut potatoes into 5cm pieces. Place in a pot and pour in
enough water to barely cover. Add salt and wait for the water to boil.
Coat a roasting tin with oil and place it in the oven to heat.
When the water reaches a full rolling boil, lower heat and simmer
reasonably vigorously for 2 minutes. Drain potatoes in a colander and
shake back and forth to fluff the outside. Sprinkle with flour and shake
again to thinly and evenly cover potatoes. Carefully place in roasting tin
and roast for 15 minutes. Turn them and roast for another 15 minutes.
Turn them over once more and put them back in the oven for another
10-20 minutes or until golden. The colouring will be uneven.
Cut broccoli into 2-inch florets. In a steamer (or colander) set over
boiling water, steam broccoli, covered, for 4-5 minutes.
