Heat oven to 190c, gas mark 5
Chop peppers and put them in a roasting tin
chop the top of the garlic bulb and put in roasting tin with peppers
drizzle with 2 tbl spoons of olive oil
roast for 20 mins.
Whilst this is cooking, boil a large pan of water with 1tbl spoon of olive oil, add pasta and cook for 15 mins.
When the peppers and garlic are roasted, remove from oven and place peppers in a blender, squeeze in the roasted garlic, add the passata and blend.
Transfer to a pan
Drain pasta and add a little bit of the water its been cooking in to the roasted pepper and garlic sauce
add salt and freshly ground black pepper
Heat the sauce gently over a medium heat then add to the pasta and mix
sprinkle with parmesan
Olive oil in the water stops the pasta from sticking.
this is nice served with garlic bread
