Pre-heat the oven to 190°C.
Arrange the peach halves in a 20cm x 20cm square ceramic baking dish. Dot with the butter and drizzle the honey on top. Bake for 15 minutes until they start to soften.
Meanwhile, combine the crushed macaroons and the crushed almonds in a mixing bowl. Remove the peach halves after 15 minutes and spoon the macaroon and almond mixture into the peach halves.
Return to the oven for 5 minutes. Remove and allow to sit for 5 minutes, before garnishing each half with a whole almond on top.
