Roast turkey with orange and spices recipe

Preheat the oven to 190°C.

Place the turkey in a roasting tray. Smother with the butter, then season well with salt and pepper. Arrange half of the thin slices of orange on top of the breast and stud the turkey with the cloves around the orange. Arrange the star anise and cinnamon sticks on top. Cover loosely with aluminium foil and roast for 2 hours.

Remove from the oven and discard the aluminium foil. Arrange the remaining thin slices of orange and the star shaped pieces of orange around the turkey. Sprinkle the ground nutmeg and cinnamon on top of the turkey.

Roast for another 15-20 minutes at 210° C. To check that the turkey is completely cooked, pierce the thickest thigh with a skewer - it's ready when the juices run clear.

Remove and allow the turkey to rest covered loosely with aluminium foil for at least 10 minutes. Transfer to a serving plate when ready to serve and arrange the orange slices and shapes around the turkey. Sprinkle the orange with paprika and garnish with celery leaves before serving.
