Slice all veg into chunky pieces.
Heat oven to 200C.
Par-boil potatoes, butternut squash and carrots for 10minutes.
Once oven is hot, put oil into a deep baking tray and place in oven to heat up.
Once veg is par-boiled, drain off then put into hot oil along with salt, pepper, onion and pepper and mix well. Cook in oven for 40 minutes.
Blend up bread, oats and parsley in food processor and place on top of fish fillets. Put fish on top of veg in baking tray and return to oven to cook for a further 12minutes.
To cook veg, use cold water, bring it up to the boil on a high temperature then reduce temperature for 10minutes.
