Preheat the oven to gas 7, 220ºC, fan 200ºC. Put the sprouts, chorizo sausages, shallots, garlic, paprika and olive oil in a roasting tin. Toss together until well mixed.
Roast for 15 minutes, stirring halfway through, until the sausages are cooked through and the sprouts have taken on a little colour.
Remove from the oven, and stir through the vinegar and the tarragon. Serve immediately.
