  • 250g (8oz) Brussels sprouts, halved
  • 150g Tesco Finest Pork Chorizo Style Chipolatas, cut into 2·5cm (1in) chunks. (You can also use regular chopped up sausage)
  • 4 shallots, each cut into 6 pieces
  • 2 garlic cloves, sliced
  • ½ tsp smoked paprika
  • 2 tbsp olive oil
  • 1 tbsp sherry vinegar
  • 2 tbsp chopped tarragon

  1. Preheat the oven to gas 7, 220ºC, fan 200ºC. Put the sprouts, chorizo sausages, shallots, garlic, paprika and olive oil in a roasting tin. Toss together until well mixed.
  2. Roast for 15 minutes, stirring halfway through, until the sausages are cooked through and the sprouts have taken on a little colour.
  3. Remove from the oven, and stir through the vinegar and the tarragon. Serve immediately.
