Prepare the duck by checking that giblets are removed, excess fat is cut away and the outside of the duck is properly rinsed. Rub the duck with the marinade and marjoram, inside and on top. Let it stand for at least 1 hour to marinate.
Wash and cut the apples into quarters, making sure to remove their seeds. Place the apples inside the duck and sew or clip the cavity.
Preheat the over 375°F 190°C, gas mark 6.
Place the duck in a baking dish in hot butter, pour over the duck fat, sprinkle with water and put into a preheated oven and bake for 1-2 hours, pouring sauce and sprinkling with water every 20-30minutes.
Once the duck is cooked divide into portions, take the apples out and put them around the duck on a dish. Pour the gravy and serve the rest of the sauce in a gravy boat. Garnish with greens.
For the gravy
To make an easy gravy dish, put aside the giblets to make a broth and add duck fat, zest and juice of an orange, paprika, salt and pepper. To thicken the sauce add corn starch until the desired thickness, and for sweetness add cranberries or sherry.
